At the beginning we make the coffee because it must be cooled until we finish the cream to be made. When it has cooled, put a teaspoon of rum essence in it and set it aside.

Separate the egg whites from the yolks. Put half of the amount of sugar over the yolks and rub well until it melts. Then put the mascarpone cheese kept in the fridge until then, and mix well.

Beat the egg whites with a pinch of salt and the rest of the sugar, and at the end add the bag of whipped cream powder. When it is ready, pour the egg whites over the yolk composition.

At the end we put sour cream and almond essence.

We take a higher tray and put a row of biscuits well syruped in coffee and pour half of the composition over them. Then we put a row of biscuits oriented in the opposite direction to the first ones and we pour the rest of the cream until we cover them well.

Powder with cocoa and put it in the fridge until the 2nd day. :))
