Separate eggs. Mix the yolks with the sweetener, yogurt, cinnamon and baking powder. Add the grated carrots and mix. Beat the egg whites with a pinch of salt. If Easter fasting still starts today, I thought I would start the week with a fasting but sweet recipe, that is, a cake. The recipe for this carrot cake (fasting) I've been keeping it in the drawer for a few months now.

I kept saying that I was posting it, and other more "urgent" recipes came, so I left it for the beginning of the post. Let it be as if I took it out of the oven right now :)

It is a simple and easy to make cake and I am sure you will like it. The version that I will write immediately is actually for a small portion of cake. We usually do it in half because we are fewer family members and we try not to abuse desserts. If you want to have more cake in the end, double the quantities passed to the ingredients.


Scented carrot cake

1. For the top, mix the eggs with the sugar and vanilla sugar until a white cream is obtained in which cinnamon, ginger and oil are added. Mix well.

2. Then add the carrots passed through the grater with small mesh and mix. At the end, add the flour mixed with baking powder. Pour the mixture into a rectangular tray and bake for 40 minutes. Then allow to cool in the pan, remove and cut with a sharp knife.

3. For the filling, prepare the gelatin according to the instructions on the package, and mix the cream with the sugar and vanilla. Then combine with gelatin.

4. Fill the top cut in half with a quarter of the amount of vanilla cream, and the rest is placed on top, smoothing with a knife passed through cold water. Leave to cool for 4 hours. Garnish with chocolate flakes before serving.

Healthy carrot cake

This homemade carrot cake and plum filling has always been my favorite. This one healthy carrot cake is a modified version of a traditional carrot cake filled with plum jam. Due to the addition of chickpea flour, it contains more protein and fiber. Moreover, it is not composed either sugar, no hydrogenated fats.

The recipe is very simplicity and you will benefit from increased nutritional values of it. The cake has a low fat content (only 3 grams for a piece), because most of the amount of fat in the classic recipe has been replaced here with apple and banana sauce. The jam can be prepared by cooking prunes and dates, which have the role of sweetening the cake without the need to add sugar or honey. This is another huge advantage over the classic recipe - this variant has a lower content of carbohydrates and calories.

If you don't have chickpea flour at home, you can replace it with whole wheat flour, you just have to make sure that the dough has a consistency thick enough to be rolled easily.

As you can see from the pictures I put in my living room, I have some favorite colors: green, yellow and orange are on the list, especially in spring and during the Easter holidays, when I feel that everything comes to life! That's why I said to propose you a colorful and cheerful cake recipe, only good for Easter. The combination of carrot, walnut and whipped cream icing is delicious, spectacular and fragrant and you will definitely make a pleasant surprise for the Easter bunny (big fan carrots, this eared one!), Which you will practically emotionally blackmail to leave you more gifts, because you deserve them!

First and foremost I heated the oven to 180 degrees, placed the grill on the middle step of the oven and lined the tray with baking paper. I used a square tray, but you can also use a cake form with a diameter of 23 cm or a rectangular tray of 20 & # 21530 cm. That being said, let's get to work: mix the sugar, vanilla sugar and eggs until the sugar melts, about 5 minutes with the mixer on medium speed. Then I added sour cream, a pinch of salt and melted margarine, I mixed them well. In the next step, I added the cleaned carrots and put them on the small grater and the walnut kernel, which I didn't grind very finely, so that the cake would be crispier. At the end I sifted the flour and baking powder and mixed well. I poured the composition into the prepared tray and put the tray in the oven for about an hour (until it passed the toothpick test).

Ingredients for the glaze:
& # 8211 250ml sweet cream for whipped cream
& # 8211 a sachet (14g) finely chopped jelly
& # 8211 2 tablespoons caster sugar

Then I dissolved the gelatin in water and let it swell. Meanwhile I beat the sweet cream (if it is already sweetened you do not have to add sugar, if it is unsweetened, beat the whipped cream together with 2 tablespoons of powdered sugar, which you add only towards the end, when the whipped cream is almost completely beaten). Then I melted the gelatin, carefully, because if it boils, the gelatin loses its properties. Then I poured the melted gelatin into the whipped cream, I homogenized and I poured the icing over the baking tray (which I leave in the form, right?). Then, over the icing I put a few slices of carrot, which you get very easily, using a vegetable cleaner.

We left the cake in the fridge overnight and in the morning we woke up with this carrot-pleasant surprise:

The top of the cake is very juicy, due to the carrots and syrup, but also crispy due to the walnut kernel. The whipped cream icing was the "icing on the cake", the flavor that perfectly complemented the cake. Cake with carrots and walnuts

We are all looking for simple, fast and definitely good, very good recipes. So do we, especially now because it is a period of stay at home (we at least) we want to do as many things for which otherwise we do not find much time, to make bread and to prepare as many recipes that make us with the eye and which we have been craving for some time.

Today, he made us want to Cristin with a carrot and walnut cake and because we really don't like the combination of the two ingredients, we didn't stop to think. I made small changes. He is also fasting, so no one has any excuse not to get down to business.

We recommend doubling the quantities if you are more than two people around it. We didn't do it and after less than two hours we looked for it in the tray :)))

ingredients:

  • 250 gr flour (in our case 150 gr white flour, 100 black)
  • 200 gr sugar, 1 sachet of vanilla sugar (optional)
  • 200 gr grated carrots
  • 1 sachet baking powder (10 gr)
  • 1 teaspoon cinnamon
  • 1/2 ground nutmeg
  • 250 gr coarsely chopped walnuts
  • 1oo ml oil
  • 200 ml of soda or mineral water
  • 1/4 teaspoon vinegar
  • Mix the flour, baking powder and sugar in a bowl.
  • In another bowl mix the oil, vinegar and mineral water. We add them over the dry ingredients, point 1.
  • Grate the carrots on a large or fine grater, as you like. We did half / half. Add the cinnamon, nutmeg and chopped walnuts. We put them over the rest of the ingredients, mix lightly and put them in the tray in which we put baking paper. Bake at 180 degrees for about 50 minutes. Because each oven is different, do the toothpick test.
  • Leave to cool (the hardest moment!) And before cutting, powder with powdered sugar. It is so good and fragrant!

Chopped hazelnuts, almonds or cashews can be used instead of walnut kernels.

Dough ingredient:

• 250 g of carrots
• 250 g of sugar
• flour
• 1 pinch of salt

Filling ingredients:

• 1 jar of jam
• 1 cup ground walnuts

How to make carrot cake

Peel a squash, grate it and squeeze the juice. Put in a bowl and add sugar and salt. Rub well with your hands, then incorporate the flour as much as it contains.

Mix with a wooden spoon. You need to get a thicker composition than the sponge cake composition.

Pour the dough into a square or rectangular tray, not very large. Level nicely with the back of the spoon. Add a generous layer of jam on top. Spread it well with a spatula or spatula.

Finally, sprinkle a layer of ground walnut kernels over the entire surface of the cake. If you want the carrot cake to have a crispier texture, you can cut the walnut kernel coarser with a knife.

Put the tray in the hot oven and let the cake bake for about 40 minutes.
