Spinach rolls

Greek cuisine It is full of delicious dishes and exotic flavors, and some of the most popular Greek recipes, apart from the Greek salad, gyros and tzatziki that we have all heard of, are the ones for pies and pastries. Today I made spinach rolls, a recipe usually made with spinach, feta cheese and green onions, and having a spiral shape. This type of appetizer is very similar to spanakopita (Greek pie with spinach), except that this recipe does not contain filo pastry dough, but puff pastry dough, which means that they are much easier to make! In short, you will have the taste and simplicity of spanakopite, but with much less effort!

Rolls with spinach and telemea

I put the kneading machine to work. I put in the car bowl, yogurt, salt, soft butter, oil, egg, flour and finally the yeast. I selected the kneading program.

In the meantime, I let the spinach thaw. Then I chopped it, not small. Personally, I don't like finely chopped spinach.
I crushed the telemeau in a bowl, added an egg and chopped dill. I mixed and then I added the chopped spinach and semolina and I mixed again. I let the composition calm down.

I turned on the oven.
I spread the dough in a large sheet, not very thick. I spread the whole filling, leveled and then rolled the whole sheet. I cut 3-finger thick rounds.
I took a tray, placed baking paper and placed the rolls that I greased with beaten egg.
I baked it, over medium heat, for about 40-45 minutes, until it browns nicely.
They are great, literally!

Puff pastry rolls with spinach and feta cheese & # 8211 a super fast and delicious snack

The puff pastry rolls with spinach and feta cheese are prepared very quickly. If your friends are coming to visit, prepare a quick snack for them. Try the recipe below if you want to surprise everyone.

Ingredient:

  • 1 sheet of puff pastry dough (275 gr)
  • 200 gr fresh spinach, 100 gr feta cheese
  • 2 cloves garlic, 2 pieces of sun-dried tomatoes in oil
  • 1 tablespoon butter, a pinch of pepper and sugar

Method of preparation:

Remove the puff pastry from the freezer a few hours before preparing the rolls, so that it thaws completely.

If we use fresh spinach, we have to wash it and break its tails. We put the spinach in a large strainer and rinse it under a stream of cold water.

Heat a medium-sized skillet. Put a tablespoon of butter in the pan. We clean the garlic cloves, put them through a press and put them in the pan. After less than a minute, add all the spinach. The spinach will soften and reduce its volume.

Stir carefully, then reduce the heat and fry the spinach for a maximum of 10 minutes. At the end, add the two pieces of sun-dried tomatoes in oil. Add a pinch of pepper and sugar. We mix everything and turn off the stove. Let the filling cool.

We spread a sheet of puff pastry on the worktop. Cut the dough in half. Put the filling in the middle of each piece of dough. Spinach was not covered during frying, so it should not be wet. If the spinach with garlic and sun-dried tomatoes has a lot of juice, drain the excess liquid.

Add the crushed feta cheese to the pieces and spread it over the spinach filling.

After we have put all the filling, we fold the sides of the dough inwards. Glue the ends of the dough and lightly press them with a fork.

Turn the two rolls on the other side, so that the place where the two parts of the dough join is at the bottom. We use a sharp knife to cut each roll into small pieces, about 4 cm wide.

We lined a tray with baking paper. Put the puff pastry pieces with spinach in the baking tray, leaving a little space between them. Grease the dough with beaten egg and sprinkle a little sesame.

Put the tray in the preheated oven at 200 degrees (baking option up / down), on the middle shelf.

In about 18 minutes, the puff pastry stuffed with spinach and feta cheese should be baked.

This snack can be served both hot and cold. Good appetite!
