Melitzanosalata- Greek style eggplant

It is by far the best eggplant salad recipe I have ever eaten. You have to try to be right. For the preparation I was inspired here Thank you Ana, whoever and wherever you are !!!!

  • 2 large eggplants [1.2 kg]
  • 100 ml oil
  • 2 teaspoons malt vinegar
  • 1/2 lemon-juice
  • 1/2 teaspoon dried oregano
  • 1 small onion
  • 1 large red pepper
  • 4 cloves garlic
  • 1 link green parsley
  • 2 tablespoons ground walnuts
  • 2 tablespoons salted feta cheese
  • fulgi chilli
  • salt

Preparation time: less than 30 minutes

RECIPE PREPARATION Melitzanosalata- Greek style eggplant:

Bake the eggplant and red pepper. clean them.

Finely chop the eggplant and diced pepper.

Put all the ingredients in a large bowl and mix, adding the oil gradually.

Cool the salad and serve with your favorite vegetables.

I preferred the more sour salad than in the original recipe.
