  • 900g Brussels sprouts, trimmed and scored
  • 350ml chicken stock
  • 90g butter
  • 75g dark brown soft sugar
  • 1 tablespoon ground black pepper

  1. Blanch carrots in a large pot of boiling salted water until crisp-tender, about 4 minutes. Transfer carrots to bowl of ice water using slotted spoon. Return water to the boil. Add sprouts and blanch until crisp-tender, about 5 minutes. Transfer to another bowl of ice water. Drain vegetables and refrigerate if making ahead.
  2. Bring stock, butter and dark brown soft sugar to the boil in a heavy large frying pan. Stir until sugar dissolves. Boil until reduced by half, about 7 minutes. Can be prepared 6 hours ahead; return to the boil before continuing. Add carrots. Cook until almost tender and sauce begins to coat, shaking pan occasionally, about 6 minutes. Add Brussels sprouts and pepper. Cook until heated through, stirring occasionally, about 4 minutes.

We Loved this recipe! After reading the other reviews and making this for myself, I've come to this conclusion...When "blanching" your veggies, cook them until the are the tenderness YOU like. I cooked mine quite a bit longer than the recipe called for. When making the sauce, I did NOT add the pepper, at all. I figured that is something that could be added at the table to an individuals liking. If serving to guests, be prepared to share the recipe! This one's a keeper!-16 Jun 2003

I have always hated brussels sprouts since i was a kid because they were so bitter. things change as you grow up. So I figured I'd try it again. holy cow! This recipe was awesome. We went out for dinner last weekend at a fabulous little restaurant. They had the most delicious maple glazed brussel sprouts and with one bite we knew exactly what we would be doing with the bag of brussel sprouts in the fridge at home. Unlike a restaurant, we don’t enjoy smothering things in butter like they do, but the results were pretty darn good. We steamed the vegetables first because it was a huge dinner that required lots of hands on time, but you could do the whole thing in a skillet for that extra caramelization. Just saute until the vegetables are tender (maybe 20 minutes).

Steaming vegetables is a healthy way to cook vegetables. It requires no additional fats and the steaming process helps the vegetable itself to retain more nutrients and flavor. You can use a steamer, the microwave, a pan, or make a makeshift steamer to steam your veggies!


Brussels sprouts

It seems like brussels sprouts and broccoli are a couple of vegetables that get a bad wrap. Perhaps that is because they are both cruciferous vegetables.

They can both be a little bitter. If your mom just steamed them to mush and didn&rsquot do much with them when you were a kid, it is understandable you wouldn&rsquot like them.

But when cooked properly, they are delicious. So much so they are actually among Little Dude&rsquos favorite vegetables.

So much so that he asks to grow both each year. It is fun to watch the stalk grow up in the center of the Brussels sprout plant.

Little baby cabbage looking nubs grow up along the stalk. They are sweetest harvested after the first frost.

We love brussels sprouts roasted with bacon. Or add the sweetness if carrots and honey like we did here.


❓ Recipe questions + quick tips

Any type of carrots will be delicious roasted. We prefer to roast larger carrots like Tendersweet and Touchon carrots, but when we want a good variety of colors we choose Kaleidoscope carrots.

As long as you wash carrots well, you do not need to peel them before roasting. In fact, unpeeled carrots are delicious because the outer layer browns when baked and provides deeper flavor through a process called the maillard reaction when the natural sugar in carrots is heated.

Carrots can be roasted whole, cut longways (or lengthwise) into halves or quarters, or cut along the length of a carrot into rounds or thicker 2-3 inch (5-7 cm) long pieces. Ultimately you can cut carrots however you’d like, but because we’re roasting carrots with brussels sprouts, we wanted to cut smaller pieces to match the size of the brussels sprouts.

Like many vegetables, brussels sprouts’ flavor transforms when roasted. Brussels sprouts lose their tart flavor when roasted, and instead have a deep, rich, and slightly sweet flavor.

You do not need to blanch brussels sprouts before roasting, but blanching will help the sprouts retain their green color when cooked with high heat.

These vegetables are a must for Thanksgiving dinner. Because of their popularity, we often serve the carrots and sprouts year-round with roast chicken, duck, baked ham, or roast pork.

Kitchenware: medium saucepan with lid, chef's knife, grater, colander

Preparation Time: 12 minutes

Cooking Time: 10 minutes

Do-Ahead: These vegetables can be made several hours before serving. Reheat them in a stainless-steel double boiler to maintain the crispness of the vegetables and to keep the glaze from burning.

  • 1 cup water
  • 1 pint Brussels sprouts, cut in half
  • 2 large carrots, cut into 1/4-inch rounds on the bias
  • 3 tablespoons sweet butter
  • 1/4 cup orange juice
  • 1 teaspoon orange liqueur (optional)
  • 2 teaspoons brown sugar
  • 1/4 cup golden raisins
  • 2 teaspoons minced ginger
Preparation
  1. Bring the water to a boil in the saucepan, add the Brussels sprouts, cover, and cook for 3 minutes. Add the carrots and cook, covered for 3 minutes more. Drain the vegetables and set aside.
  2. To make the glaze, melt the butter and add the orange juice and liqueur. Add the sugar and stir until dissolved. Add the raisins and ginger and simmer for 2 minutes more. If you don't have orange liqueur, add grated zest of a small orange to enhance the orange flavor.

Service: Coat the vegetables with the glaze. Sprinkle with grated orange rind.

Cook's Tip: For those who aren't Brussels sprout lovers, green beans or sugar snap peas can be substituted.

I think I just went to brussels and carrot heaven! OMG The addition of spices and pumpkin? wowzer this is a fabulous side for anytime but I am so saving this for Thanksgiving LOVE LOVE LOVE.


Recipe Summary

  • 2 cups fresh Brussels sprouts or one 10-ounce package frozen Brussels sprouts
  • 3 mediums carrots, quartered lengthwise and cut into 1-inch pieces
  • ⅓ cup orange juice
  • 1 teaspoon cornstarch
  • ½ teaspoon sugar
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt

Cut Brussels sprouts in half. In a medium saucepan combine sprouts and carrots. In covered medium saucepan cook in a small amount of boiling water for 10 to 12 minutes or until crisp-tender. Drain well. Return all of the vegetables to pan.

In a small bowl stir together the orange juice, cornstarch, sugar, nutmeg (if desired), and salt. Add to Brussels sprouts and carrots. Cook and stir the mixture over medium heat until thickened and bubbly. Cook and stir for 1 minute more. Serve immediately. Makes 4 side-dish servings.
